Alfalfa specialist studies using it for human foods

Alfalfa may have a future as a plant-based protein for human foods. Numerous companies have already asked the University of California to explore the feasibility of harvesting alfalfa in a way that would give them the very high protein leaves for use as an ingredient in meat substitutes and other food products.
